Southern Biscuits (Recipe from Alton Brown) Ingredients: 12 oz All-purpose flour (plus about 1/4 cup for dusting) 4 tsp baking powder 1/4 tsp baking soda 3/4 tsp kosher salt 1 oz unsalted butter, chilled 2 oz shortening, chilled 1 cup buttermilk Directions: 1.) Preheat oven to 400 degrees F 2.) Whisk all dry stuff in large mixing bowl 3.) Use fingertips to rub the butter and shortening into dry goods until mixture looks like course crumbles 4.) Make well in middle of mixture and pour in buttermilk. Stir with large spoon until it comes together. (don't overstir) 5.) Turn dough out onto floured surface and knead until smooth 6.) Press into 1-inch thick round--use 3-inch cutter to cut out biscuits biscuits 7.) Place biscuits into 9-inch cast iron skillet or half sheet pan with biscuits barely touching--press dimple in tops w/ thumb 8.) Let cook for 15-20 mins--cast iron will take longer. 9.) Use toothpick to check doneness.
