B, my SO, mentioned a while ago a desire to make homemade bread again. (Code: please make bread.) For years she has been the family baker, thousands of loaves, sustaining her family through the growing years. Plus I am always looking for an 'attaboy' when I can find one. And, I let her drive, so to speak. Her choice of recipe, Betty Crocker's broken spine paperback that has see us through since B and I were kids, and were we Kids ('nother story|ies). Fast forward to todays KitchenAid stand mixer, just assembling the ingredients like she, B and BC, tells me. (Side note: reality check; "4-6 Qt Kitchen Stand Mixer" appears to be maxed out kneading a two loave batch of bread dough. Straining.) Turned out the BC picture.perfect dough and do a full 10+ minutes kneading. Set the oven to Warm (it is chilly in the house). Ball up the dough, nestle it in a warmed bowl, coating it with a tablespoon of olive oil. Bowl is covered with wrap and left on top of the stove (no direct heat, just warmth) to rise. Doubled right on schedule. Punch down, divide by half, let rest for 5 minutes, really, all 5 of them. Form the loaf being sure to pinch the seam on the bottom. 25-30 minutes at 425F, until golden brown and gives a full bodied responce to thumping the bottom of the loaf. P.S. 200F interior temp if you have a good thermo. Today it was toast. Full firm Bread richly browned and then slathered with butter (sorry to my Cardio guy). B opted for a Grilled Cheese. This required a careful thin slice. She lauded praise on fresh bread. Today the very reality of losing my ginormas monitor (TV) is setting in Hard. Harrumph. Fifty inch down to 22 is almost like being on one of my laptops. Just another hiccup in this technological road. mo anon
