Braune Bohnensuppe [Brown Bean Soup] 3 quarts water; 1 1/2 cups pinto beans; 1 large sweet potato, diced; salt and green onion to taste small ham bone or cubed salt pork For the dumplings; 2 eggs; 2 tablespoons water; 1 cup flour or more to make soft dough Cook beans until soft, about 3 hours. If soaked overnight, cooking time will be shorter. Add ham bone and cook for 30 minutes. Add potato, salt, and chopped onion tops. Cook 30 minutes more. Drop in dumplings by teaspoon, 15 mintues before serving. Servers 6 to 8
