Ingredients: 4 cups flour 4 tablespoons olive oil 1 teaspoon salt 3/4 cup water 1 lb. manouri or cottage cheese or Myzithra Cheese 1 lightly beaten egg 1/2 teaspoon cinnamon 1 teaspoon grated lemon rind 2 tablespoons sugar Olive oil for frying Sugar Cinnamon Directions: Prepare the dough by combining the flour, olive oil, salt and water. Leave covered for an hour. Mix cheese, egg, cinnamon and sugar in a large bowl Roll out the dough 1/8 inch thick, onto a floured board Cut into small rounds 3 inches in diameter. Place 1 tablespoon of the cheese mixture on each round of dough, moisten edges; fold over and seal well, pressing the edges together with a fork. Deep fry in hot oil until golden brown. Sprinkle with sugar and cinnamon and serve hot.
