**note to self** works with naan, lots easier. === Ingredients: 1/2 cup all-purpose flour 2 large eggs, beaten with a fork 1 cup water 1 tablespoon olive oil 1 cup crumbled feta cheese Pepper, to taste 1/2 cup mixed, fresh herbs (oregano, basil, thyme, parsley, etc), chopped Directions: Add the flour and eggs to a medium bowl and whisk together until smooth. Slowly add the water while whisking or beating. Cover the bowl with plastic wrap and let sit for 30 minutes up to 2hrs. Preheat the oven to 400F. Brush a large baking dish with olive oil. Add the crumbled feta cheese, pepper, and fresh herbs to a medium bowl Gently mix. Stir one cup of this mixture into the batter and pour into the baking dish. Bake for 30min or until top is golden brown & sides come away from the dish. Remove from the oven and let cool in the pan. Cut into wedges just before serving.
