Recipe: 2# cut oxtails washed and cleaned 1 whole sweet onion chopped 1# fresh purple hull peas(you can also use crowder,creamers,black eyed) 2 tsp salt and pepper 3-4 qt water or chicken stock 4-5 sweet peppers(optional) place oxtails and onions in large pot season with salt and pepper let simmer for 1 hour after 1 hour add peas and peppers and cook an additional 1 hour or until peas and oxtails are tender (adding more water as needed)only need enough water or stock to cover peas) ENJOY WITH CORNBREAD
