Very crispy tofus ================= Serves: 2 INGREDIENTS ----------- o 1 block of firm tofu (approx. 200 g) o Oil for frying Liquid breading --------------- o 60 g flour o 120 ml plant-based milk (e.g., soy or oat milk) o 1 tsp mustard (e.g., Dijon or hot) o 1 tsp lemon juice or apple cider vinegar Dry breading ------------ o 1 tsp salt o 1/2 tsp cayenne pepper o 1/2 tsp garlic powder o 80-100 g panko breadcrumbs o 1 tsp paprika powder PREPARATION ----------- 1. Prepare the tofu: Lightly dry the tofu with paper towels and cut it in half widthwise. 2. Prepare the breading: In a bowl, mix the flour, plant-based milk, mustard, and lemon juice to form a thick mixture (the consistency of paint). If it is too runny, add a little more flour; if it is too thick, dilute it with a little more plant-based milk. In a second bowl, mix the panko with salt, cayenne pepper, garlic powder, and paprika powder. 3. Double coating: First dip the tofu in the flour mixture, then press it into the panko mixture. Then dip it in the flour mixture again and coat it with panko once more for an extra crispy coating. 4. Frying: Fry in a pan with plenty of oil over medium heat until golden brown and crispy on all sides.
