Healthy tray-baked chicken ========================== Ingredients ----------- o 4 large ripe tomatoes o 2 red onions o 4 fat cloves of garlic o 2 bell peppers o 6 chicken thights, bone out o 1/2 a bunch of fresh thyme o 1 teaspoon smoked paprika o 2 tablespoons balsamic vinegar o olive oil Method ------ Quarter the tomatos. Slice the peppers, it doesn't really matter how you slice them but make sure to cut out the white parts from within. Peel and quarter the onions, you can leave the root on. Put all vegetables into the roasting tray. Put the chicken thighs on top.
