Dry ingredients: 2 c flour 1/2 t salt 1/4 t baking soda 1/2 T baking powder 1 t cinnamon dash of allspice Wet ingredients: 4 ripe bananas, mashed 2 jars of baby food prunes 1/2 c. brown sugar, packed (you could use less) juice of one lemon zest of 1/2 a lemon (you could use more) 2 eggs, beaten (I used egg-beaters, I'm not familiar with how ener-G works, but perhaps it would be ok here) 1 1/2 t vanilla Optional additions: raisins dried cherries Preheat oven to 350. In a large bowl, mix dry ingredients. Combine wet ingredients thoroughly, add to dry ingredients. Mix until evenly moistened (do not overmix). Spread batter into a loaf pan that has been prepared with oil spray. Bake 45-50 minutes till a knife inserted comes clean. Let cool in pan 10 minutes, then cool completely on a rack.
