* Exported from MasterCook * Coconut Bread Trinidad Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Breads, Tea Loaf Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c Flour 1 ts Salt 1 c Sugar 1 c Evaporated milk 1/2 c Unsalted butter -- melted, - cooled 1 tb Baking powder 2 c Fresh coconut -- finely grated 1 lg Egg -- well beaten 1 ts Vanilla Sugar Sift flour, baking powder, and salt. Stir in coconut. Combine egg, milk, vanilla, and butter. Make a well in the dry ingredients. Pour liquid into the well. Stir lightly but thoroughly and pour into two greased 8 or 9" loaf pans, filling pans about 2/3rd full. Sprinkle the top of the batter with sugar. Bake at 350 F for about 55 minutes or until they test done. Notes: I have used packaged coconut instead of the fresh but found a little more liquid was needed.
