MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Baked Hush Puppies
 Categories: Testing, Easy
      Yield: 12 Servings
 
           Oil, Butter or cooking spray
           For pan
    1/3 c  Yellow corn meal
  1 1/2 tb All purpose flour
    1/2 ts Baking powder
    3/8 ts Salt
      1 ds Black pepper
    1/4 c  Finely chopped onion
           (Add little more onion)
  1 1/2 tb Milk
      1 lg Eggs
      1 tb Unsalted butter, melted
 
  Preheat oven to 450.  Lightly grease 12 cups in mini muffin pan or
  spray with nonstick spray.
  
  Combine cornmeal, flour, baking powder salt and pepper.
  
  In another bowl, mix together onion,, milk, eggs and melted butter.
  
  Fold egg mixture into the flour mixture until the flour mixture is
  just moistened.
  
  Spoon 1 tablespoon of batter into each prepared mini muffin cup.
  
  Bake 10 minutes OR until hus puppies are firm to the touch and golden
  brown around the edges.

  Tested 10/09  Made 11 mini hush puppies, use scant tb next time These
                baked up nicely, had the texture and flavor of fried
                Hushpuppies.  Will certainly make again.
