* Exported from MasterCook * Ripe Banana Bread Recipe By : From the Ripe Banana Bag Serving Size : 12 Preparation Time :1:00 Categories : Breads - Quick Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 tb Butter -- room temperature 3/4 c Sugar 2 Eggs 1 c All-purpose flour 1 ts Baking soda 1/2 ts Salt 1 c Whole wheat flour 3 lg Ripe bananas -- mashed 1 ts Vanilla 1/2 c Walnuts -- coarsely chopped Preheat oven to 350 F, grease 9x5x3" bread pan. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift all purpose flour, baking soda and salt together, stir in whole wheat flour and add to creamed mixture, mixing well. Fold in bananas, vanilla and walnuts. Pour mixture into pan, bake 50 to 60 minutes or until cake tester comes out clean. Cool in pan 10 minutes, then on rack. Makes one loaf.
