* Exported from MasterCook * Monkey Bread Recipe By : Pat Cooley Serving Size : 10 Preparation Time :0:00 Categories : American Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup Crisco 2/3 cup Sugar 1 teaspoon Salt 3/4 cup Boiling Water Or Milk 2 Cakes Yeast or pkgs of dry 1/4 cup Luke Warm Water 3 1/2 C Flour 1 cup Mashed Potatoes -- Buttered With Milk Added ** 2 Eggs Melted Butter ** Hint: Boil The Potatoes First So You Don't Have To Wait On Them. Dissolve yeast in 1/4 C luke warm water and set aside. Place the sugar, salt, and shortening in a bowl, pour on the boiling water or milk, and stir till dissolved. Set aside. After the sugar and shortening have completely melted, add 1 C of the flour and potatoes. Stir and add the yeast and eggs. Beat well, adding remaining flour, and place in a greased bowl. Brush the top with melted butter. Allow to rise till double in size. Stir down on a floured board, and knead lightly (add flour) and roll out 1/2 inch thick. Cut with a biscuit cutter. Place in layers in a tube pan. Brush each layer with melted butter. Let rise to double size again. Bake in a 400 F. oven for about 45 minutes or until good and brown. Can make ahead of time, go ahead and bake, and just reheat when ready to serve. - - - - - - - - - - - - - - - - - -
