* Exported from MasterCook * Fiesta Banana Cake Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Bananas Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 C. sifted Swans Down cake flour 1 1/3 C. sugar 1/2 Tsp. soda 1 1/2 Tsp. baking powder 1 C. mashed bananas 1/2 C. shortening 1 C. buttermilk 2 Tsp. vanilla 2 eggs 1 C. chopped pecans Frosting: 1 C. heavy cream 3 bananas 1 Tbsp. finely chopped maraschino cherries Beat sugar, shortening and eggs. Add bananas, vanilla and 1/2 cup buttermilk. Then add sifted dry ingredients alternately with remaining buttermilk and nuts. Bake at 350 degrees in two 8-inch pans for 25 to 30 minutes. Cool cake in pan for 5 minutes, remove from pans and finish cooling. Frosting: halved maraschino cherries Whip heavy cream. Peel and cut 3 bananas crosswise into 1/4-inch slices. Fold chopped maraschino cherries into 1/3 of whipped cream and spread on bottom layer. Arrange half of banana slices on top. Cover with second layer and spread top with remaining cream.
