Diller Serving Size: 20 Preparation Time: 1:00 Categories: Cakes Amount Measure Ingredient Preparation Method 2 cups sugar 4 whole egg 3 cups carrot grated 2 teaspoons baking soda 1/2 teaspoon salt 1 teaspoon vanilla 1 cup canola oil 2 cups cake flour 1 teaspoon apple bake Seasoning 8 tablespoons margarine 3 cups sugar, confectioner's 8 ounces cream cheese 1 teaspoon lemon extract Preheat 18 Quart Nesco Roaster to 375 degrees. Beat granulated sugar, vanilla, eggs, and oil in large mixing bowl until smooth. peel about 10 medium carrots and grate using food processor. After grating change to blade and pulse several sections to chop ( Do Not puree ). add carrots, flour, baking soda, spices, and salt to sugar mixture. Beat at medium speed for 2 minutes. Pour into greased & floured 9 x 13 pan. bake for 45 - 50 minutes until done. Test with toothpick in center. Remove cake from pan and cool on rack until completely cool. Spread frosting over cake and refrigerate until ready to serve. Frosting recipe : Lemon Water Mixture = 1 tsp Lemon Extract and Water to make 1 Tablespoon. Cream margarine and cream cheese. Beat in 3 cups powdered sugar and lemon/ water mixture until light & fluffy.
