                                Honey Cake

   1      lb            Honey
   1      c             Sugar
   3                    Eggs
   2      c             Coffee
   4      c             All purpose flour
   4      ts            Baking powder
   1      ts            Baking soda
   1      ts            Allspice
   1      ts            Cinnamon
   1      ts            Ginger
     1/2  ts            Nutmeg
     1/4  lb            Raisins
   2      oz            Almonds -- cut lengthwise

Beat eggs until light. Add sugar and beat until thick.

Beat in the honey and add all the dry ingredients alternately with
the coffee. Add the raisins and pour into an oiled or greased large
pan. Sprinkle with almonds and bake in a moderate oven for about 1/2
to 3/4 hour.

Yield: 3 lb cake (approximate)
