MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Orange Olive Oil Cake Categories: Cakes, Desserts, Citrus Yield: 10 Servings 2 lg Eggs 2/3 c Sugar 1/2 c Extra virgin olive oil 1/3 c Milk 1 tb Orange zest; grated 3 tb Orange juice 1 c A-P flour 1 ts Baking powder 1/4 ts Salt Confectioners' sugar Set oven @ 350 F/175 C. Line a greased 8" round baking pan with parchment. In a large bowl, beat eggs on high speed 3 minutes. Gradually add sugar, beating until thickened. Gradually beat in oil. Beat in milk, orange zest, and orange juice. In another bowl, whisk flour, baking powder, and salt; fold into egg mixture. Transfer batter to prepared pan, spreading evenly. Bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool completely in pan before removing; remove parchment. Dust with confectioners' sugar.
