MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grab-And-Go Freezer Cheesecakes Categories: Cookies, Cheese, Dairy, Citrus Yield: 24 servings 8 13/16 oz Pkg Biscoff cookies 6 tb Butter; melted 1 tb Sugar 1/4 ts Salt MMMMM--------------------------FILLING------------------------------- 12 oz Cream cheese; softened 1/2 c Sugar 1/2 c Sour cream 1 ts Lemon juice 1 tb Vanilla extract 8 oz Tub whipped topping; thawed Sweetened whipped cream - (optional) Pulse cookies in a food processor until fine crumbs form. Add butter, sugar, and salt; pulse just until combined. Press mixture gently onto bottoms of 24 foil-lined muffin cups. For filling, beat cream cheese in a large bowl until smooth. Add sugar, sour cream, lemon juice, and vanilla. Fold in whipped topping. Spoon over crusts; freeze until firm, at least 6 hours. Transfer to freezer containers; return to freezer. To use, thaw in refrigerator for thirty minutes before serving. If desired, top with whipped cream and additional cookies.
