                            Eggnog Cheesecake

   2      c             low-fat graham cracker crumbs
   3      tbsps         margarine -- melted
                        ----Filling----
   8      ozs           fat-free cream cheese -- softened
  14      ozs           fat-free sweetened condensed milk
   1                    egg white -- whipped
     1/2  tsp           rum extract
     1/4  tsp           nutmeg

Preheat oven to 300. Prepare a 9" pie pan with cooking spray and flour; set
aside. To prepare crust, combine graham cracker crumbs and margarine. Press
into bottom of prepared pan. To prepare filling, combine cream cheese,
milk, egg white, rum extract, and nutmeg. Pour into crust. Bake for 40
minutes or until lighly browned.
