* Exported from MasterCook II * Rhubarb Cobbler Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups chopped rhubarb 1 cup sugar 1 3 oz package strawberry flavored gelatin 1 1/2 cups flour 1/2 tsp. salt 1/2 cup butter 1 cup sugar 2 tsp. baking powder 1 egg -- beaten 3/4 cup milk 1 tsp. vanilla 2 tsp. cinnamon 2 T sugar Combine rhubarb w/ sugar and gelatin and set aside. Mix flour, baking powder and salt in bowl and set aside. Cream butter and sugar in large mixing bowl; beat in egg. Add dry ingredients alternately w/ milk and vanilla. Blend until smooth. Grease a deep-dish pie plate w/ margarine or butter. Spread rhubarb mixture on bottom and batter over rhubarb. Top w/ 2 tsps. cinnamon mixed w/ 2 T. sugar. Bake at 350 for 40 minutes.
