---------- Recipe via Meal-Master (tm) v8.05 Title: Orange-Date Bars Categories: Cookies Yield: 16 servings 2 c Old-fashioned rolled oats 2 c All-purpose flour 1 ts Ground cinnamon 1 c Pitted chopped dates 2 c Apple juice; divided 1/2 c Orange juice 3 tb Grated orange peel 1 ts Vanilla Recipe by: St. Louis Post-Dispatch 10/21/96 Preheat oven to 350 degrees. Grind oats to a powder in blender about 1 minute. Transfer to a large mixing bowl. Stir in flour and cinnamon. Set aside. Puree dates, 1/2 cup apple juice, orange juice, orange peel and vanilla in food processor or blender. Moisten oat mixture with remaining 1 1/2 cups apple juice to form a stiff dough. Press dough into bottom of lightly oiled 8-inch-square pan. Spread date puree evenly on top. Bake 35 minutes or until crust is firm. Let cool completely. Cut into 2-inch squares. Yield: 16 squares.
