* Exported from MasterCook * Cranberry-Orange Bars Recipe By : ADA Holiday Cookbook Serving Size : 24 Preparation Time :0:00 Categories : Cookies Diabetic Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c Cranberries -- finely chopped * 2 Oranges -- ground skins & pulp 1/2 c Raisins -- dark or golden 1/4 c Brown sugar ** 1/3 c Margarine 2 Eggs 1 ts Vanilla 1 c Whole wheat flour 1 c Unbleached white flour 2 ts Baking powder * substitutions = 2 cups whole fresh or frozen berries instead of 1 cup chopped. ** substitutions = 2 tb fructose instead of brown sugar Combine the cranberriess, oranges, raisins, and brown sugar in a mixing bowl. Set aside. Cream margarine until light and fluffy. Add 1 egg at a time and beat well. Blend in vanilla. Gradually add the flours and baking powder to the creamed mixture. Stir in the cranberry mixture and pour the batter into a greased 13x9" baking pan. Bake in a 350 F oven for 30 to 40 minutes, or until browned on top. Cool in the pan on a wire rack.
