---------- Recipe via Meal-Master (tm) v8.04 Title: Luscious Little Lemon Bars Categories: Dessert, Favorite, Lemon, Posted-mm, Suzy Yield: 16 squares 1 c All-purpose flour 1/4 c Powdered sugar 1/2 c Unsalted butter ----------------------------------FILLING---------------------------------- 2 lg Eggs 1 c Granulated sugar 1 Lemon - zest 1/4 c Fresh lemon juice 1/2 ts Baking powder 2 tb All-purpose flour 1/2 c Sweetened flaked coconut Source: The Wooden Spoon Cookie Cookbook 1. Preheat oven to 350 F. 2. In food processor, combine flour, powdered sugar, and butter and process to fine crumbs. (Alternative: Stir the flour and powdered sugar together. Cut in the butter to make fine crumbs.) Pat the crumbs into an 8x8x2-inch glass baking dish. Bake the crust for 20 minutes. 3. To prepare the filling: Toward the end of the baking time for the crust, beat the eggs until smooth and lemon-colored. Beat in the sugar, stir in the lemon zest and lemon juice. Blend in the baking powder and flour. Stir in the coconut. 4. Pour the filling over the baked crust. Return to the oven and bake for 20-25 minutes, or until lightly browned on top.
