---------- Recipe via Meal-Master (tm) v8.05 Title: Scottish Shortbread Categories: Cookies Yield: 20 servings 1 c Butter; softened 1/2 c Sugar; plus 2 tb Sugar 2 c Sifted all purpose flour 1/4 ts Salt 1/4 ts Baking powder Heat the oven to 350 deg. Beat the butter til it's light & creamy. Add 1\2 C sugar and beat until mixture is fluffy. Sift the flour, salt & powder together & fold into the butter mixture. Put the dough on an unbuttered baking sheet & pat into a 1/2" thick rectangle. Mark the dough into 1"x2" bars with the point of a knife. Sprinkle with the remaining sugar & bake in the center of the oven for 15 min., until the edges are very lightly browned. Cool for 15 min. on baking sheet then cut into bars as marked. -----
