* Exported from MasterCook * Chocolate Sandwich Cookies Recipe By : Lisa Lepsy Serving Size : 1 Preparation Time :0:00 Categories : Cookies Dessert Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- For Cookie: 3 cups flour 1 1/2 cups sugar 3/4 cup cocoa powder 3/4 teaspoon salt 3 teaspoons baking powder 1 1/2 cups milk 2 eggs 1 1/2 teaspoons vanilla 3/4 cup shortening For Filling: 3/4 cup butter -- softened 2 cups powdered sugar 1/8 teaspoon salt 1 jar marshmallow cream -- 7 oz. 1 1/2 teaspoons vanilla 1 tablespoon milk For Cookie: Blend together dry ingredients and then add all wet ingredients. Blend thoroughly. Drop by rounded teaspoons onto an ungreased cookie sheet. Leave space and only use a teaspoon,they spread. Bake at 400 for 7-8 minutes. Remove immediately and cool. For Filling:Blend all and beat with mixer till fluffy. Spread filling on one cookie and top with another, sandwich style. - - - - - - - - - - - - - - - - - - NOTES : Excellent frozen. I have played with this over the years and add 1 t peppermint extract to the filling at the holidays in lieu of the vanilla,and have also used crushed peppermint candy in the filling. I have also coated them in confectioners coating. (Dip in chocolate) I don't remember how many it makes...my granny never had that on the recipe....a bunch, but they won't last!
