* Exported from MasterCook II * Lemon Chiffon Pie (Microwave) Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Pies Desserts Fruits Microwave Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 env Unflavored gelatin 1/2 c Sugar 1/2 tsp Salt 16 oz Can sliced peaches -- undrained Water 6 oz Can frozen lemonade concentrate -- undiluted 1 c Evaporated milk -- icy cold, whipped 1 10" graham cracker crust -- baked in a heat-resistant pie pan In a 1 1/2-quart, heat-resistant, non-metallic bowl, mix gelatin, sugar and salt. Drain liquid from peaches into a glass measuring cup and add enough water to make 3/4 cup. Add peach liquid mixture to gelatin mixture. Heat gelatin mixture in Microwave Oven 3 minutes or until gelatin is dissolved. Stir every 45 seconds. Add undiluted lemonade concentrate to hot gelatin mixture. Chill in refrigerator until mixture mounds slightly when dropped from a spoon. While lemonade mixture is chilling, whip chilled evaporated milk until stiff peaks from. Fold whipped evaporated milk into chilled gelatin mixture. Arrange peach slices on bottom of graham cracker crust reserving slices to garnish the top of the pie. Pour mixture into pie crust.
