* Exported from MasterCook * Diabetic Easter Fudge Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Low-Cal Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 oz Unsweetened chocolate 1/4 c Evaporated milk 1/2 ts Vanilla 1 ts Artificial liquid sweetener 1 Box sugar free vanilla or - chocolate pudding powder - or 8 ts finely chopped - nuts Melt chocolate in top of double boiler over boiling water. Add evaporated milk and mix. Cook 2 to 3 minutes, then add vanilla and sweetener. Spread on small foil pie pan or plate. Chill. Cut into 8 pieces. Form into egg shaped balls and then roll lightly in pudding powder or chopped nuts. Variations: Add in some shredded coconut for a tropical twist.
