---------- Recipe via Meal-Master (tm) v8.05 Title: Famous Fudge Categories: Candies Yield: 25 servings 2 c Sugar 2/3 c Half-and-half 1/4 c Light corn syrup 1 oz Unsweetened chocolate square 1/4 c Butter or margarine 2 ts Vanilla extract Double-good fudge 1 Famous fudge recipe 1 Peanut butter fudge See recipe for Recipe by: Southern Living Preparation Time: 0:15 Combine sugar, half-and-half, corn syrup, and unsweetened chocolate square in a Dutch oven; cook over low heat, stirring gently, until sugar dissolves. Cover chocolate mixture and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook to soft ball stage (238 degrees), stirring occasionally. Remove chocolate mixture from heat. Add butter and vanilla. (Do not stir.) Cool to lukewarm (110 degrees); beat with a wooden spoon until mixture thickens and begins to lose its gloss. Pour mixture into a buttered 8-inch square pan, spreading with a spatula. Cool and cut into squares. Yield: about 1-1/4 pounds. DOUBLE GOOD FUDGE: Prepare Famous Fudge as directed above, but pour mixture into a buttered 9-inch square pan. Prepare Peanut Butter Fudge and pour over chocolate layer. Yield: 3 pounds. -----
