* Exported from MasterCook * PINEAPPLE FUDGE Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Candy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup evaporated milk 3 cups granulated sugar 1/4 cup unsweetened canned pineapple juice 2 tablespoons butter 1/2 cup diced candied pineapple (optional) 2 teaspoons lemon juice Butter an 8-inch square pan. In a medium saucepan, combine milk, sugar and pineapple juice and cook to soft ball stage (238 degrees F on a candy thermometer), stirring constantly to prevent burning. Remove from heat and stir in butter. Cool in pan without stirring again. When cool, add candied pineapple, if using, and lemon juice and beat until crystallization begins.
