In large heavy saucepan, combine sugar, corn syrup, and water. Cook until sugar dissolves, stirring constantly. Continue cooking until candy thermometer reaches hard crack stage (300 F), stirring occasionally. Remove from heat; stir in vanilla and baking soda.
