                               Potato Candy

     3/4  c             Mashed potatoes -- cold
   4      c             Powdered sugar -- sifted
   4      c             Coconut -- chopped
   1 1/2  ts            Vanilla
     1/2  ts            Salt
   4      oz            Baking chocolate -- melted

In a mixing bowl, combine potatoes, sugar, coconut, vanilla, and salt
until blended. Press into one large or two small pans, so candy will
be 1/2" thick. Melt chocolate in double boiler. Pour melted chocolate
on top of candy, cool, and cut into squares.
