MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Marcelle Bienvenu's Creamy Pralines Categories: Five nuts, Candy, Dairy Yield: 12 servings 2 1/4 c Brown sugar; firm packed 1/8 ts Salt 3/4 c Evaporated milk 1 tb Butter 2 c Pecan halves In a heavy, medium saucepan, combine sugar, salt, milk, and butter. Cook over low heat, stirring constantly, until sugar dissolves. Stir in pecans, and cook over medium-low heat, until mixture reaches soft ball stage (238 F/114 C on a candy thermometer). Remove from heat, and let cool 2 minutes Stir mixture rapidly until it begins to thicken and lightly coats the pecans. Drop by heaping tablespoonfuls onto parchment paper.
