MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pumpkin Truffles Categories: Chocolate, Cheese, Squash Yield: 12 Servings 4 oz White baking chocolate; - broken in pieces 3 oz Cream cheese; softened 1/3 c Canned pumpkin 2 tb Pumpkin butter 1/2 ts Pumpkin pie spice 1 1/2 c Graham cracker crumbs MMMMM------------------SUGAR COATING & GARNISH----------------------- 2 tb Sugar 1/2 ts Pumpkin pie spice Miniature semisweet - chocolate chips; garnish Place white chocolate pieces in a microwave-safe bowl. Cook at 50% power for 90 seconds; stir. Microwave at 30-second intervals until melted, stirring between intervals. Set aside for 5 minutes to cool. In a large bowl, beat cream cheese and pumpkin puree until smooth. Stir in pumpkin butter, melted white chocolate, and pumpkin pie spice. Add graham cracker crumbs; stir until well-combined and a thick dough forms. Cover and refrigerate until dough is firm, at least 2 hours or overnight. To make coating, in a small bowl, mix together sugar and pumpkin pie spice; set aside. Scoop chilled dough into tablespoonfuls; roll into balls. Roll in the sugar-spice mixture until evenly coated. Roll a toothpick or blunt edge of a knife gently into the sides to make the pumpkin's ridges. Top each with a mini chocolate chip to make the stem.
