           -softened
      4 c  Powdered sugar; sifted
      2 ts Lemon rind; grated
      2 tb Lemon juice; 2 to 2 1/2

  Cream butter at medium speed of an electric mixer;
  gradually add sugar, beating until light and fluffy.  Add
  lemon rind and lemon juice; beat until smooth.  Yield:  2
