* Exported from MasterCook * Strawberry Gelato Recipe By : Better Homes and Gardens, Jul 1997 Serving Size : 20 Preparation Time :0:00 Categories : Not Sent Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c Strawberries -- cut up 6 c Milk 1 1/3 c Sugar 12 Egg yolks -- beaten 2 dr Red food coloring -- up to 3 dr, - (optional) Place berries in a blender container or food processor bowl, cover, and blend or process until nearly smooth. In a large saucepan combine 3 cups of the milk, the sugar, and egg yolks. Cook and stir over medium heat till mixture coats a spoon. Dip a spoon into the custard and draw a line with your finger through the coating. The custard is done when the edges along the line keep their shape. Remove from heat. Stir in the remaining milk, the berries, and food coloring, if desired. Cover surface of gelato mixture with plastic wrap. Refrigerate several hours or overnight until chilled. Or, place the saucepan in a sink of ice water to chill quickly. Freeze in a 4 or 5 qt ice cream freezer according to manufacturers directions. Ripen for 4 hours. - - - - - - - - - - - - - - - - - -
