* Exported from MasterCook * RICH CUSTARD MANGO ICE CREAM Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Ice Cream Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups heavy cream 1 cup milk 2 egg yolks 1 teaspoon almond flavoring 1 can evaporated milk -- (16 oz.) 2 cups mango -- chopped 1/2 cup crystallized ginger -- chopped 3/4 cup sugar Dissolve sugar in cream & milk. Beat yolks and add 1 cup cream mixture to yolks while continuing to mix. Pour into remaining cream mixture. Add almond flavoring. Cook over medium heat, stirring constantly, for 8 minutes. Cool. Whip evaporated milk and fold into mangos. Add ginger. Fold mango mixture into cooled custard. Freeze in ice cream maker according to instructions.
