Beat egg yolks, sugar, and salt. Pour milk over mixture. Return to double boiler and cook until it coats spoon. Allow mixture to cool. Add fruit, evaporated milk, vanilla, and enough of the cold milk to fill the ice cream container. Freeze according to manufacturer's directions.
