                           PEAR AVOCADO MOUSSE

   2                    Very ripe pears, peeled and
                        -chopped
   1                    Very ripe avocado, peeled,
                        -seeded and chopped
   2       tb           Lemon juice
   2       tb           Grated orange rind
   2       tb           Spiced or plain dark rum
     1/2   c            Chopped peanuts or macadamia
                        -nuts
   1       d            Allspice

  mint sprigs for garnish
  
  Combine all ingredients in a blender or food processor and puree for
  approximately 1 minute.  Pour the pureed mixture into a glass dessert dish
  or parfait glasses and chill in the refrigerator for at least an hour.
  Garnish with mint sprigs and serve cold.
