* Exported from MasterCook * Lemon Curd Recipe By : Microwave Gourmet by Barbara Kafka Serving Size : 1 Preparation Time :0:00 Categories : Desserts Microwave Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 c Butter 1/2 c Sugar 4 tb Fresh lemon juice 1 Lemon -- zest of 3 Eggs Place butter, sugar, juice, and zest in 4 cup measure. Cover with plastic wrap. Micro on HIGH for 4 minutes. Remove from oven, stir well. Whisk 1/4 cup mixture into eggs to warm them. Whisking constantly, pour egg mixture back into remaining lemon mixture. Cook uncovered on HIGH for 2 minutes. Whisk until smooth. Microwave 2 minutes longer. Remove and immediately pour into food processor and process for 30 seconds. Cool before serving. Good served on pound cake, toast, over berries, as pie filling, as cake filling, or in tart shells.
