---------- Recipe via Meal-Master (tm) v8.05 Title: FRUIT FILLED GINGERBREAD Categories: Cakes Yield: 1 Servings -Patricia Dwigans fwds07a- 1-1/4 c Flour 3/4 ts Soda 1/2 ts Cinnamon 1/4 ts Cloves 1/4 ts Nutmeg 1/4 ts Salt 1/4 c Candied fruit; diced 2 tb Candied ginger; sliced, OR 1/2 ts Ground ginger 1/4 c Sugar 1/4 c Shortening 1 Egg 1/3 c Honey 2 tb Molasses 1 c Hot water 1/4 c Nuts; finely chopped --------------------------------ORANGE GLAZE-------------------------------- 1/3 c Sugar 1/4 c Orange juice 1/2 ts Lemon extract Sift together flour, soda, spices and salt. Add diced candied fruit and candied ginger, if desired. Blend together shortening and sugar, creaming well. Add egg, honey and molasses; beat well. Blend in dry ingredients; mix thoroughly. Add hot water and mix until smooth. Pour into well greased and lightly floured 8x8x2-inch pan. Sprinkle with nuts. Bake at 350 for 30-35 minutes. Pour orange glaze over cake. Return to oven; bake 10 more minutes. Orange Glaze. Combine sugar and orange juice in a saucepan. Boil 5 minutes.
