                      Strawberries and Creme Fraiche

     1/2  c             Heavy cream
     1/4  c             Sugar
     1/2  ts            Almond extract
     1/2  c             Sour cream
   4      c             Strawberries
                        Fresh mint sprigs

In a chilled bowl, beat together cream, sugar and almond extract
until stiff. Fold in sour cream until evenly blended.

Wash and hull strawberries. Toss gently in cream mixture and
refrigerate. To serve, spoon berries into champagne or sherbet
glasses and top each with extra creme fraiche and a sprig of mint.
