* Exported from MasterCook * Summercrest Parfait Recipe By : Newspaper Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c raspberries, strawberries, or - blueberries, fresh or frozen 1/4 c sugar 2 tb corn starch 1/4 c water 1 tb lemon juice 8 oz plain yogurt 3 peaches, coarsely chopped -- (2 c) In small saucepan, stir berries and sugar. Stir corn starch and water until smooth. Add to fruit mixture. Cook over med heat, stirring constantly, until mixture comes to boil; boil 1 minute. Stir in lemon juice. Cool. Fold yogurt into cooled fruit. In parfait glasses, alternately layer berry mixture with peaches. Freeze. Remove from freezer 1/2 hour before serving. - - - - - - - - - - - - - - - - - - NOTES: "Low-calorie light dessert. Peaches and berries, thickened with corn starch are layered in parfait glasses alternately with yogurt, then frozen right in the parfait glasses."
