MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mash Wbatata (Mung Beans And Potatoes) Categories: Lebanese, Vegetarian Yield: 6 Servings 3 Potatoes; cubed 1 c Mung beans 1/3 c Olive oil 2 lg Onions Salt; black pepper; to taste Hold cubed potatoes in a bowl of water. Place the beans in a pot; add 3 cups water and bring to a simmer. Simmer the beans 20 minutes. Add the potatoes and cook until soft and fully cooked, 20 minutes or so more. Meanwhile, fry the onions until golden in the oil. When the potatoes are cooked, add the onions and season to taste. Serve immediately.
