* Exported from MasterCook * Brazilian Bean Sauce Recipe By : Houston Chronicle Serving Size : 6 Preparation Time :0:00 Categories : Beans Brazilian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 oz Kidney beans 7 c Water 1/4 lb Beef chuck 1/4 lb Salt pork -- sliced 1 Pig's feet -- quartered 1 c Raisins 1 tb Olive oil 1 sm Onion -- chopped 2 cl Garlic -- minced Salt and pepper -- to taste Place beans, water, beef, salt pork, and pigs foot in a large, heavy kettle. Bring to a boil, reduce heat, and simmer covered 1-1/2 hours or until beans are tender. Remove from heat and discard meat. Add raisins. Heat oil in a small skillet and add onion and garlic; cook until just tender. Stir into beans with salt and pepper to taste. Refrigerate overnight to allow flavors to blend.
