                 Queso Fresco Tacos With Tomatillo Salsa

  12      oz            Queso Fresco
   1 1/2  lb            Tomatillos
   2      lg            Yellow onions -- finely chopped
   2      tb            Garlic -- minced
     1/4  c             Lime juice
   4      ts            Dried oregano
   4                    Serrano peppers -- chopped,
                        - veined, and seeded to desired
                        - heat level
   1      c             Cilantro -- chopped
                        Salt and pepper -- to taste
                        Corn tortillas

Tomatillo Salsa:

Peel the husks of the tomatillos and dice. Mix with onions, garlic,
lime juice, oregano, chilies, cilantro, and salt and pepper to taste.
Serranos vary in heat, so add accordingly.

Cut the Queso Fresco into 1/2" pieces and place in warm tortilla. Top
with the salsa.
