MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Fajitas Categories: Beef, D/g, Mexican Yield: 2 servings 10 oz Beef -- good london broil -cut into thin strips 2 c Julienned large onion -strips 3 c Julienned bell pepper -strips--red, green and/or -yellow 2 T Oil ( for veg) 1 tb Oil (for beef) 1 1/2 ts Plus 1/2 teaspoon Cajun -BEEF MAGIC. 1/8 c Lime juice (2 servings) flour tortillas, warmed sour cream , tomato salsa and/or other toppings as desired. After cutting veg. into strips then cut meat into strips and place meat strips in large bowl and sprinkle with 1 1/2 teaspoons Cajun beef magic, tossing to coat well. Pour lime juice over meat and toss again. Let marinate about 30 minutes or more. In 12 inch heavy Skillet (big cast iron), heat 2 tablespoon oil over medium high heat. Add all vegetables and saute. After a few minutes, add very small amount of water, then cover with lid or pizza pan to help steam green peppers. (reduce heat if necessary to avoid burning vegetables). Transfer vegetables to bowl and set aside. Use first Skillet without wiping for cooking meat. To cook meat -Heat unwiped Skillet over high heat 45 seconds; and 1 Tablespoon oil, then pick up meat with fingers and quickly add to Skillet. Sear and cook meat about 35 seconds, turning once or twice. Add whatever marinate left in meat bowl to vegetables. Add more Cajun spice as desired and stir Place meat on top of warm vegetables, toss slightly and serve. The flour tortillas can be steamed between damp paper towels in the micro wave. Place a damp towel between each tortilla and zap on high for about 10-15 seconds for each tortilla. Do only enough for one serving at a time. Or, they can be heated on a flat griddle. On medium heat, heat for 20-30 seconds on first side, flip over and then heat for 10-15 seconds on the other side.
