MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Mexican Casserole Categories: Chicken, Mexican, Southwest, Tested Yield: 4 Servings 1 c Crushed tortilla chips 10 oz Pulled cooked chicken 1 cn Black beans, drained 1/2 c Frozen corn 1 c Salsa 1/2 c Onion, diced 1/2 c Green pepper, 1/4 inch dice 1 tb Minced garlic Salt/pepper to taste 12 oz Shredded mexican cheese MMMMM--------------------------GARNISH------------------------------- Chopped tomato Sour cream Extra salsa Chopped cilantro NOTE: Can double recipe and use 9 x 13 baking pan. Preheat oven to 350 Spray a 7 x 11 baking pan with cooking spray. Shread or tear chicken into smaller pieces. Drain and rinse black beans. Dice onion green pepper and garlic, measure out corn and salsa. Salt and pepper to your taste. Place all those ingredients into large mixing bowl. Mix well, set aside. Crush tortilla chips into smallish pieces and spread over the bottom of the baking pan. Place half of the chicken mixture evenly on top of the chips, sprinkle with half of the cheese. Make one more layer of chicken mixture and top with remaining cheese. Bake in preheated oven for 30 minutes or until golden brown. Let stand for 5 minutes before serving. Will try green salsa and adding a can of green chilis next time to see how that goes. Did not use any garnish. Reheats in microwave nicely. MMMMM
