MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mexican Cabbage Roll Soup Categories: Greens, Chilies, Herbs, Beef, Vegetables Yield: 6 servings 1 lb Lean ground beef 1/2 ts Salt 3/4 ts Garlic powder 1/4 ts Pepper 1 tb Olive oil 1 md Onion; chopped 6 c Cabbage; chopped 12 oz Chopped green chilies - (3 cans) 2 c Water 14 1/2 oz Can beef broth 2 tb Fresh cilantro; minced MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Pico de gallo Sour cream In a large saucepan, cook and crumble beef with seasonings over medium-high heat until no longer pink, 5-7 minutes. Remove from pan. In same pan, heat oil over medium-high heat; saute onion and cabbage until crisp-tender, 4-6 minutes. Stir in beef, chiles, water, and broth; bring to a boil. Reduce heat; simmer, covered, to allow flavors to blend, about 10 minutes. Stir in cilantro. If desired, top with pico de gallo and sour cream.
