* Exported from MasterCook * Fideo Ancho Recipe By : Diana Kennedy - Food and Wine Magazine Serving Size : 4 Preparation Time :30:00 Categories : Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Ancho chiles -- seeded 2 1/2 c Chicken stock 2 Whole cloves 1 cl Garlic -- coarsely chopped 1/8 ts Cumin -- seeds Salt 1/4 c Vegetable oil 4 oz Angel hair pasta Queso anejo Avocado Limes -- quartered Cover chiles with water and simmer for 5 minutes, let soak until soft. Pour 1/4 cup of the chicken stock into the blender, add the cloves, garlic, and cumin seeds and blend until smooth. Season with salt. Add another 1 cup of the stock and the drained chiles blending until smooth. Heat the oil in a large heavy saucepan. Add the pasta and fry tossing until it reaches a golden brown color. Add blended ingredients to pasta and fry about 3 minutes longer, scraping pan to prevent sticking. Reduce heat to low and cook until pasta is al dente, 5 to 8 minutes.
