MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Tacos De Fajitas Al Carbon Categories: Grill, Sandwich, Meat, Seasoning Yield: 1 Servings 4 oz Lime juice 1 oz Worcestershire sauce 10 Peppercorns 1 Bay leaf 1 tb Celery powder 2 tb Cumin 1 lg Onion; in thin rings 2 Dry chili peppers; crumbled 2 1/2 lb Skirt steak MMMMM-----------------------SEASONING MIX---------------------------- 1 tb Cumin 1 ts Salt 1 tb Pepper Lime juice 2 oz Mexican beer 4 oz Olive oil 2 Whole cloves 1 ts Marjoram 2 tb Paprika 2 tb Brown sugar 1 cl Garlic; minced 1 c Cilantro; chopped Salt and pepper 1 tb Paprika 1 ts Brown sugar Butter Flour tortillas To make marinade, combine lime juice, beer and Worcestershire sauce in glass bowl. With a whisk beat in oil a few drops at a time. Add peppercorns, cloves, bay leaf, marjoram, celery powder, paprika, cumin, brown sugar, onion, garlic, chili peppers and cilantro. Stir vigorously. Trim fat from meat and sprinkle uniformly with salt and pepper. Poke vigorously all over with a fork, piercing meat completely. Turn over and repeat on the other side. Put meat into marinade. Cover and refrigerate for 48 hours, stirring occasionally. Combine cumin, paprika, salt, brown sugar, and pepper and set aside. Prepare very hot fire on charcoal grill, adding chunks of moist mesquite wood. You should not be able to hold your hand five inches from grill. Remove meat from marinade and cook for 1 1/2 minutes. Turn over and brush with marinade; cook for 1 1/12 minutes. Turn and brush again. Cook for 4 minutes and sprinkle with cumin mixture. Turn and sprinkle with seasoning. Top with several thin pats of butter and a few drops of lime juice. Cook for 4 minutes more. Remove from grill and let sit 5 minutes. Slice crosswise on bias.
